3 cups ketchup
2 cups cider vinegar
1/2 cup Worcestershire sauce
1/2 cup soy sauce
1 cup light brown sugar
1/2 to 3/4 cup dark brown sugar
1/2 cup molasses or 1 cup if you don't have any dark brown sugar
2 tablespoons mustard powder
1/2 to 1 cup chili powder
1/2 tablespoon ginger
5 cloves of garlic chopped in large chunks
2 sliced lemons
1 Bring the vinegar up to a boil
2 then reduce to a simmer
3 add sugar, mustard, chili and ginger powders
4 add powders slowly to try and get as much into solution as possible
5 Once the powders have been blended into the vinegar immediately add the ketchup before too much vinegar evaporates
6 Once ketchup is mixed add the Worcestershire and soy sauces
7 Stir
8 Once all is mixed add the garlic cloves
9 Float the lemon slices on top of the sauce
10 Cover and simmer for at least 1 hour
11 The longer it simmers the smoother the sauce will be and the more the vinegar will mellow out so as to not be too overpowering
